5-Minute Healthy AF Sea Salted Peanut Butter Cups | Reality Rehab

This is one of those recipe that makes you feel like all is right with the world. It's uncomplicated, nearly impossible to fuck up, and it literally takes minutes to put together. 


You are just 5 minutes away from sea salty, peanut buttery, dark chocolaty bliss. Everything is going to be ok. 

It is important that you have:

  • a double boiler situation — doesn’t have to be anything fancy. I use a metal bowl over a pot of water.

  • A whisk

  • silicone muffin cups (Because you have to mold these fuckers. And there's just no other way to do it.)

Gather and set aside: *peanut butter, flaky sea salt, and cacao nibs. 

Into your double boiler - dump:

  • 1 cup coconut oil (if you’re coconut oil is solid, weigh out 200 grams. If you don’t have a digital kitchen scale, well. What the fuck?) If you think you're going to be making these a lot, you need to start buying coconut oil in bulk. Otherwise you'll go broke. Get it at Costco, or here.

  • 2/3 cup raw cacao powder (best deal at Trader Joe’s)

  • 1/3 cup maple syrup (also Costco)

Once it is 100% melted and warm, whisk the shit out of it.

Line a tray with 30 muffin cups and pour 1 tsp. of the chocolate mix into each cup (you'll have a lot leftover). Stick the tray in the freezer for a minute or so until the chocolate is just set.

Pull the trays out of the freezer and put a teaspoon sized dollop of peanut butter on top of the chocolate. Pat it down with your finger to spread it out evenly until it's almost to the edge. 

Working very quickly, take your chocolate and put another teaspoon full on top of the peanut butter dollops. If you have leftover chocolate after this just eyeball it and divide among the cups. 

Still working quickly, generously sprinkle the top of each cup with flaky sea salt and cacao nibs.

Put in the freezer to set. They're technically ready after just a minute or so in the freezer - you just need the chocolate to be set, but I think they're even better the next day once the peanut butter gets really cold and more solid. 

*A note about peanut butter. If you're not making your own, you really need to get your shit together. Just buy some roasted, salted peanuts from the bulk bins and dump them in your food processor. Turn it on and let it go until it turns into peanut butter. That's all. That's how you make peanut butter. It's stupid easy. And you'll never go back to the store bought stuff. It will make you wonder what is even in that shit - even the natural organic stuff.
