5-Minute, Healthy AF Sea Salted Peanut Butter Cups | Reality Rehab

This is one of those recipe that makes you feel like all is right with the world. It's uncomplicated, nearly impossible to fuck up, and it literally takes minutes to put together. 

Like. 

You are just 5 minutes away from sea salty, peanut buttery, dark chocolatey bliss. Everything is going to be ok. 

It is important that you have:

  • a double boiler situation — doesn’t have to be anything fancy. I use a metal bowl over a pot of water.

  • A whisk

  • silicone muffin cups (Because you have to mold these fuckers. And there's just no other way to do it.)

Set the bowl of your double boiler situation on a kitchen scale and measure out:

  • 200 grams of coconut oil (If you don’t have a digital kitchen scale, well. What the fuck? 200 grams is equal to about 1 cup of oil) If you think you're going to be making these a lot, you need to start buying coconut oil in bulk. Otherwise you'll go broke. Get it at Costco, or here.

  • 55 grams (or 2/3 cup) raw cacao powder (best deal at Trader Joe’s)

  • 105 grams (or 1/3 cup) maple syrup (also Costco)

  • 150 grams (or 1/2 cup) peanut butter*

  • Generous splash of whisky (or vanilla extract if you’re a baller — that shit’s expensive right now)

Put your bowl over a small pot of simmering water and give it a little whisk. Once it is starting to actually get warm, whisk the shit out of it. The warming/whisking is important because it allows the oil to really hydrate the cacao and thus prevents separation when your freeze them.

Line a tray with 30 muffin cups and begin spooning in your fudge — I don’t measure. I just use a large spoon and just sort of eye ball it. If I had to guess, I’d say it’s something like a heaping tablespoon per cup.

Once you’ve got all the fudge portioned out, sprinkle the top of each cup with flaky sea salt and cacao nibs.  Or really anything crunchy. Cacao nibs are expensive so sometimes I just do chopped peanuts on top.

Put in the freezer to set. They're solid enough to eat after about 20 minutes.

*A note about peanut butter. If you're not making your own, you really need to get your shit together. Just buy some roasted, salted peanuts from the bulk bins or from Costco and dump them in your food processor. Turn it on and let it go until it turns into peanut butter. That's all. That's how you make peanut butter. It's stupid easy. And you'll never go back to the store bought stuff. It will make you wonder what is even in that shit - even the natural organic stuff.
