The Best Cinnamon Pumpkin Granola EVER

Ok, seriously. I'm not just saying cinnamon pumpkin granola. It really tastes like cinnamon. And pumpkin. It's as close to perfection as I've ever come with granola. And it's so easy:

In Bowl # 1, mix: 

  • 3 cups oats
  • 1 cup chopped walnuts
  • 1/2 tsp salt
  • 3/4 cup shredded unsweetened coconut
  • 2 tbsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp cardamom
  • 1/4 nutmeg

In Bowl #2, mix:

  • 1/3 c maple syrup
  • 1/2 c coconut oil
  • 1 tbsp vanilla
  • 1/4 cup pumpkin or sweet potato puree

Combine bowl #1 and bowl #2, mix until oats and nuts are well coated. Spread mixture on an extra large cookie sheet, or divide between two 9x13" baking dishes - if you want clumps, just squeeze some hand fulls of mix together. 

Bake at 325 for ten minutes, mix and bake an additional ten minutes. It will crisp up a bit as it cools. Let cool completely before transferring to a storage container.
